Bacon to slice
Compared to the tense version, rolled pancetta is obtained from the same cut of pork (the rib, boneless) but involves a different process: the raw material is folded on itself and wrapped in natural gut, then cured for four months in the Livigno air. The result is a round-shaped sausage, invitingly pink and white in colour, which is sliced thinly and savoured on its own or with bread, appreciating the light scent of wine in the background.
