The violin-slicing mountain sausage
Goat's violin is a sausage with a great tradition, widespread throughout the Alps and reaching as far as Valtellina and Livigno. Its particular name is linked to the way in which it is sliced: whoever performs this action behaves exactly like a violinist playing his instrument, placing the sausage on his shoulder and moving the knife back and forth like a bow. Thanks to this method, thin slices are obtained that fully express the uniqueness and nobility of this dried meat product: a strong and unmistakable flavour, thanks to the curing and marinating of the whole goat's leg.
