Livigno's typical artisan sausage
The slinziga or slinzega is a typical sausage from Livigno that resembles a small bresaola in every way, but is actually different in several respects. The raw material is always beef and is made from the leanest cuts of beef, which are seasoned and massaged with a tanning of assorted spices. The curing process for slinziga is shorter than for bresaola: it only takes a couple of weeks for it to develop its dry texture and typical dark red colour. The slinziga is cut into slices with a knife and eaten at aperitifs in the mountains: craftsmanship as it once was and family tradition.
