<p>Among ours <strong>Mountain cured meats produced in Livigno</strong> There are two <strong>Traditional Alpine products</strong>, noble and with a long history behind them: the <strong>goat fiddle</strong> and the <strong>sheep fiddle</strong>. Let's find out more about their characteristics, what aspects they have in common and where they differ.</p>

<p>The name "violin" for a cured meat might sound strange, yet the explanation is very simple. The appellation derives from <strong>methods by which these products are traditionally sliced</strong>are rested on the shoulder and, holding them at the opposite end with one hand, just like a bow instrument, one proceeds to <strong>cut with a knife</strong> with the other hand, yielding <strong>Thin, aromatic slices</strong>.</p>

The artisanal processing involves the <strong>Tanning of hides</strong> with a blend of salt, pepper, natural flavourings and wine and then, after the massage, a process of <strong>appassimento and ageing</strong> which here in Livigno lasts about 2 months. The slow drying of this goat salami is functional for flavouring the meat, which matures <strong>unique and authentic taste</strong>.</p>

From the <strong>Whole lamb legs</strong>, used as raw material, thus giving birth to the sheep violin, whose processing is analogous: the meats, marinated with salt, wine, and spices, are subjected to slow curing, which lasts on average <strong>one month more than the goat violin</strong> (circa 90 days), during which their organoleptic and taste characteristics mature.</p>
<p>Besides the <strong>Differences in ageing</strong>, these sheep's cured meats have a <strong>Larger weight grading</strong> compared to goat violins – about 1.5-2 kg – and a slightly different taste profile: their flavour is therefore <strong>fuller, rounder, and sometimes sweeter</strong> Compared to the goat version, a symptom of a wider aromatic bouquet. Ideal as <strong>Appetiser meats</strong> along with its cousin, the sheep's fiddle pairs well with <strong>Full-bodied red wines, rustic jams and mountain honey</strong>.</p>

Of course, there are many differences compared to July and August: the verdant pastures and mountains all around are covered in snow, the animals do not graze in the meadows but are sheltered in the barn on our farm, and the temperatures are much lower. But inside the farmhouse the atmosphere is that of summer days: <strong>warmth, cosiness and lots of good food</strong>.</p>
<p class="translation-block">Here, in our spacious dining room or at the tables outside on sunny winter days, you will find everything you need to <strong>have an unforgettable experience in Livigno</strong>, while contemplating a dreamlike panorama: a <strong>typical lunch with local dishes</strong>, or a <strong>tasting of home-made, zero-km products</strong>. <p class="translation-block">Just as in summer, the Alpe Vago alpine pasture is the ideal destination for a <strong>nature hike in Livigno</strong>, but in winter it is even more special: the alpine pasture is located in an area immersed in the tranquillity of nature, where it is not possible to arrive by car because the road in the direction of the Forcola Pass remains closed during the winter months. The only way to <strong>get to Alpe Vago</strong> is therefore by snow:</p>

<li><strong>walking with snowshoes</strong>, walking from the last bus stop in Livigno in the Forcola area (Blue and Green lines) following the beaten track;</li>

When the track begins to descend, in a few steps you reach the halfway point of the snowshoe hike, which coincides with the <strong>most scenic and 'Instagrammable' point</strong> of experience: the <strong>Lovers' Bridge</strong>, a small, pretty wooden bridge suspended over the Tresenda stream with two carved hearts affixed to it. <p>In Valtellina, the most popular typical dish is undoubtedly the <strong>pizzoccheri</strong>, in Livigno there are the <strong>pizocar</strong> and care must be taken not to confuse them: a tourist ordering the <strong>"Pizöcar da Livign</strong> Expecting a dish of the famous buckwheat noodles topped with butter and potatoes, he would be rather taken aback by what he would be served (but not disappointed, after tasting). Pizocars are in fact <strong>white dumplings prepared with white flour, eggs, milk and salt</strong> (in the past, stale bread was also used in the original recipe) and spooned. For the <strong>pizocar seasoning</strong> butter, onions and potatoes are used instead. The latter, an inevitable ingredient of pizzoccheri, have only been introduced in recent times, as originally pizocar was seasoned with <strong>turnips</strong>one of the few vegetables that could be grown in Livigno given the temperatures and altitude.</p>
<p>Even without buckwheat flour and cabbage, Livigno's pizocar are a very tasty dish and an expression of ancient <strong>local peasant cuisine</strong>Indeed, pizocar is even considered an older dish than pizzoccheri, from which the latter are said to be inspired. A real <strong>traditional Livigno food</strong> still to be savoured in all its authenticity, at the tables of our agritourisms.</p>
<p>The premises and <strong>pizocar restaurants in Livigno</strong> cooked according to tradition are not many: at the <a href="https://alpelivigno.it/en/vague-alp/"><span style="text-decoration: underline;">Alpe Vago hut</span></a> we still prepare them as they used to be, come and try them!</p>
