{"id":1907,"date":"2025-09-30T07:58:13","date_gmt":"2025-09-30T06:58:13","guid":{"rendered":"https:\/\/alpelivigno.it\/?p=1907"},"modified":"2025-09-30T08:01:14","modified_gmt":"2025-09-30T07:01:14","slug":"butter-livigno","status":"publish","type":"post","link":"https:\/\/alpelivigno.it\/en\/butter-livigno\/","title":{"rendered":"Alpe Livigno alpine butter: a superior quality product"},"content":{"rendered":"<h2>Livigno's authentic mountain butter, an artisanal product of excellence<\/h2>\n<p>&nbsp;<\/p>\n<p>&nbsp; <strong>dairy production<\/strong> which kicks off from the <strong>fresh milk processing<\/strong> of our cattle has several flagships, from the <a href=\"https:\/\/alpelivigno.it\/en\/products\/scimudin\/\"><span style=\"text-decoration: underline;\">scimudin<\/span><\/a> at <span style=\"text-decoration: underline;\"><a href=\"https:\/\/alpelivigno.it\/en\/products\/cottage-cheese\/\">cottage cheese<\/a><\/span>but a separate chapter deserves our <strong>butter<\/strong>: a <strong>typical product of Livigno<\/strong> which preserves the flavour of the pastures and stems from a long tradition of craftsmanship.<\/p>\n<p>&nbsp;<\/p>\n<h3>Our Livigno butter: ingredients, processing and characteristics<\/h3>\n<p>Alpe Livigno butter is a <strong>mountain butter<\/strong> which we produce exclusively during the summer, when our cows graze in the open air, feeding on the<strong>fresh grass from the Alpe Vago meadows<\/strong>at an altitude of around 2000 metres. To obtain it we use the <strong>raw milk<\/strong> resulting from the daily milking of the cows, which rests overnight until the cream rises: once separated from the milk, it is placed inside the <strong>churn<\/strong>from where the butter loaves will come out to be shaped using the special wooden mould.<\/p>\n<p>Ours is a <strong>0 km0 alpine pasture butter<\/strong>because it is produced within the <strong>Alpe Vago Alpine dairy<\/strong>in the same place where the cows graze in the summer months. It has good nutritional properties, the most important of which is the intake of <strong>vitamins A and D<\/strong>and is a portentous <strong>natural antioxidant<\/strong> which protects against the effects of free radicals and cellular ageing.<\/p>\n<p>The high quality of Alpe Livigno butter is evidenced by the fact that it was selected, along with a small number of products, for the <strong>TAS'T project in Livigno<\/strong> (Timeless Alpine Tradition) which brings together the <strong>foods typical of Livigno's traditional cuisine<\/strong> to rediscover and enhance them (<span style=\"text-decoration: underline;\"><a href=\"https:\/\/alpelivigno.it\/en\/alpe-livigno-products-tast\/\">find out more about the TAS'T project<\/a><\/span>).
